The answers to all these questions are found in a splendid book, A Good Plain Cook, published by the Queensland Museum. The authors, Susan Addison and Judith McKay, have collected recipes, tips on food preparation, anecdotes and historical illustrations from the cooks of 'frontier' Queensland.

Answers
Polite ham sandwiches have fillings made from mashed potato, beaten egg and finely minced or pounded ham.
An 'Angel on Horseback' consists of an oyster wrapped in bacon, baked and served on toast.
A 'Devil in a Chariot' consists of half a sheep's kidney wrapped in bacon, baked and served on toast.
